Effective January 6, 2021 our pastry menu will be exclusively gluten free and keto (which is naturally gluten free when made with clean ingredients). We are making this change in order to better serve our gluten sensitive customers who are concerned about cross contamination – including Dream Bakery owner Karen, who has celiac disease and has been experiencing health issues related to gluten exposure.
All of our offerings are gluten free (with the exception of our conventional custom cakes, which are baked in an offsite kitchen to avoid cross contamination). Items labeled “gluten free” are made with a rice flour base and traditional sweeteners. Items labeled “keto” are made with almond and/or coconut flour and alternative sweeteners such as monkfruit, alluose and erithyritol. We do not use any starches or fillers in our keto items (with the exception of the keto cinnamon rolls, which are dusted with a small amount of tapioca starch so they don’t stick when we roll them out).
Allergen information for each item is provided in the item descriptions on our online ordering page. Keto items also include net carb counts.
PLEASE NOTE WE ARE NOT SUITABLE FOR THOSE WITH NUT ALLERGIES DUE TO THE LARGE AMOUNT OF ALMOND FLOUR WE USE IN OUR KITCHEN. We also use dairy, eggs, soy and peanuts.
